Waxy maize starch consists of branched-chain glucose molecules
in contrast to simple or double sugars, waxy maize starch contains up to 1000 or more glucose molecules in a branched arrangement
the long-chain and relatively complex structure is quickly emptied from the stomach, but is broken down into glucose by digestive enzymes at a delayed rate
